Signs of quality of our cheesesWe are very concerned with the irreproachable quality of our products that is why lots of our products are produced under quality labels .
Rocamadour AOC and Picodon AOC : these goat’s milk cheeses benefit from the AOC label (Appellation d’Origine Contrôlée) : the production must take place within a strictly defined region complying with detailed specifications.
Organic food : Organic Saint Marcellin and organic Saint Felicien : The organic milk is collected every day and transported to the production plant. With this milk, we manufacture organic cheeses according to environmentally safe standards.
A.O.C labels (meaning controlled designation of origin) are ruled by decrees that define very precisely their conditions of production and origin from a specific region . These marks are controled by the government through the INAO (Institut National des Appelations d’Origines – the national institute for designation of Origin)
The AOC label gives the producer the opportunity to value his know-how and protect it against counterfeit . For the consumer it is a security (soil – tradition – authenticity). Today there exists 42 AOC cheese labels. The oldest one dates back to 1925 and was awarded to Roquefort cheese and the youngest one was awarded in 2003 to Banon cheese. Rocamadour has obtained its AOC in 1996 and Picodon in 1986.
Such a product is constituted with raw materials that are for 97% from organic farming. Such agriculture favors human size farms, not using pesticides nor hormones nor antibiotics. The organic label means ethical production, as for soils as for animals.
Such agriculture is supported by a union called « l’Union paysanne » that defines itself as a citizen union. The organic products are identified thanks to the BIO logo and are certified by « qualité France »
Fromageries de l’Etoile quality systemFood safety high quality of our products have always been the top priority for Fromageries de l’Etoile. Our quality system is based upon the risks analysis HACCP (HAZARD ANALYSIS and CRITICAL CONTROL POINT) created by NASA and adapted to agrobusiness.
Such system guarantees an irreproachable food safety level by a daily control of our products and raw materials employed at each step of the production. Then, from the milk collecting at the farm (the farmer complies with very strict criteria on the dairy farming, herd feeding and collect of the milk) to the final product delivered to the distributor, our cheeses are controlled step by step . This traceability system gives us in real time a total control and deep knowledge of our products
Since 2007, the production plants Etoile du Vercors, fromagerie Verdier and Chartrousin are IFS certified (International Food Standard). This standard is undoubtedly the most advanced one in food safety and is the recognition of our efficient work and irreproachable quality of our products.
This standard is based upon key measures that we implement at each level of the production : Supervision step by step of the production, selection of raw materials and finished products, consumer respect and safety & risks analysis (HACCP)
We would have not been awarded the IFS label without the involvement, motivation and skills of our Etoile du Vercors staff, associated to the involvement of our milk producers, suppliers and partners.
This label proves to our clients the high quality of our cheeses and our know-how. It will open to us the european and international markets so that our exquisite cheeses be known all over the world.
